Two things to look at: 1) register_meta()
2) custom-fields support on post type.
1) register_meta
You can register your custom post meta with show_in_rest => true
to make it accessible via the api.
Bottom of this page: Modifying Responses, provides the following example:

2) custom-fields support
The above page mentions that your CPT needs to have custom-fields support for it to show up in the response.
Add custom-fields
to the supports array 'supports' => array('title','editor','thumbnail','custom-fields')
in the $args array when registering the post type.
Within context of a CPT registration, I’ve added it as the last item on the last line of $args array.
