Read more carefully about register_taxonomy, you will notice that you forgot a rewrite argument, that anables pretty links (rewrites + links generation) for your taxonomy. As for listing taxonomies you can use wp_list_categories or any other alternatives.

WordPress Custom Permalink Structure with Custom Post Type and Taxonomies
One way to do it is by creating a CPT for user profiles, and creating one “post” of that type per each user. Remove the user’s ability to add or remove osts and let him edit that post. This will make searching easier as you simply restrict the search for the specific CPT.
