I use the Next Gen Smooth Gallery plug in which is a small additional plugin which makes customizing slideshows and galleries from the nextgen plug in VERY easy.

Have you filled out the “alt” tags properly. The chances of being indexed are less if the tag is not included. Additionally, the file name for the image should not be “quor7b.jpg” unless it’s a photo of a Quor7b. The file name should also reflect the image (e.g. rose.jpg).
I would go with Categories + Posts, if there’s no data in-between that gets in the way.
For simple galleries, I usually code something up using Magic Fields. It gives the client an easy to use interface for adding images via the media library, with drag-and-drop reordering. Then I’ll use a jQuery slider on the front-end, or I’ll write my own.
